1.5 cinnamon sticks
1 teaspoon whole black peppercorns
5 whole cloves
3 green cardamom pods
3 cm fresh ginger
1/2 l water
1.5 tablespoons loose black tea leaves
50 g light brown sugar
300 ml milk foam
1. Crush the cinnamon sticks using a mortar and pestle. Add peppercorns, cloves, and cardamom pods to a bowl and crush until the spices are broken into pieces.
2. Transfer the spices to a small saucepan and toast for 3–4 minutes over medium heat until their aroma is released.
3. Slice the ginger and add it to the saucepan. Toast for another minute.
4. Boil water to 100 °C in the KitchenAid electric kettle. Pour the water into the saucepan. Let it steep for 5 minutes.
5. Add the black tea leaves and let them steep for 10 minutes.
6. Add the Muscovado sugar and stir until well combined.
7. Strain the tea into a teapot using a fine-mesh strainer.
8. Pour the hot tea into individual cups.
9. Add the milk foam and stir to incorporate it.
