30 g butter
1.5 tablespoons flour
375 ml milk
225 ml heavy cream
3 cloves garlic
1.5 teaspoons salt
1 teaspoon pepper
6 sprigs fresh thyme
1 teaspoon nutmeg
1.5 kg potatoes
105 g Gruyère cheese
1. Melt the butter in a skillet over medium heat. Add the flour and stir constantly with a whisk for 2 minutes.
2. Add the milk and cream a little at a time, continuing to stir. Let it simmer. Peel and mince the garlic. Add the garlic, salt, pepper, thyme, and nutmeg to the skillet and let it simmer for 5 minutes.
3. Peel the potatoes. Insert the reversible slicing/grating disc into the food processor on the slicing side. Process the potatoes on speed 1.
4. Flip the disc to the grating side and grate the cheese on speed 2.
5. Butter a baking dish. Spread a layer of the cream mixture. Add 1/3 of the potatoes. Cover with the sauce and sprinkle with 1/3 of the cheese. Continue with two more layers. Do not sprinkle the last layer with cheese; set it aside instead.
6. Cover the baking dish with aluminum foil and bake for 1 hour. Remove the aluminum foil. Sprinkle with the cheese and return the dish to the oven for another 15 minutes at 200 °C until the top is nicely browned.
