Ingredients:
2 tablespoons extra-fine sugar
6 tablespoons melted butter
150 g Oreo cookies
450 g cream cheese, at room temperature
1 teaspoon vanilla extract
125 g powdered sugar
40 g sour cream
60 g cold heavy whipping cream
1 teaspoon black gel food coloring
450 g black gel food coloring
1. Place the Oreo cookies, melted butter, and sugar in the food processor and mix on speed 2 until well combined.
2. Press the mixture into the bottom of a springform pan lined with parchment paper. Place in the freezer until the filling is ready.
3. Place the cream cheese, vanilla extract, and powdered sugar in the bowl of a stand mixer fitted with a whisk attachment. Mix on speed 6 for 2 minutes.
4. The mixture should be light and fluffy.
5. Add the whipping cream and sour cream and mix on speed 6 until the mixture is thick and creamy.
6. Spread the filling evenly over the previously prepared cookie crust. Tap the springform pan on the countertop to smooth the top of the filling.
7. Using the black food coloring mixture (a mixture of black gel food coloring and cream cheese) transferred to a small piping bag, create a spiral on the cheesecake. Start from the center of the cheesecake and work your way toward the outside of the cake.
8. Take a clean skewer and draw lines from the center toward the edge of the cake. Clean the skewer each time you draw a new line.
9. Let the cheesecake chill in the refrigerator for at least 4 hours.
10. Before cutting the cake, remove the side band of the springform pan and the parchment paper.
