5 eggs, with yolks and whites separated
200 g caster sugar
200 g self-raising flour
1 kg powdered sugar
460 g softened butter
2 tablespoons whole milk
1 teaspoon red food coloring
2 candy canes
3 candy canes, crumbled
1. Cake: Place the egg whites in the bowl of a stand mixer fitted with the wire whisk. Beat on speed 10 until stiff. Gradually add the caster sugar while mixing. Add the egg yolks and continue mixing until fully combined.
2. Attach the scale and sift attachment and sift the flour into the bowl on speed 4. Do not remove the wire whisk, as it will gradually fold the flour into the egg mixture.
3. Cut a piece of parchment paper and place it on the bottom of a springform pan. Grease the pan with cooking spray.
4. Fill the pan 2/3 full. Smooth the surface.
5. Bake in a preheated oven at 160°C (320°F) for 40-45 minutes (a skewer inserted into the cake should come out clean). Let the cake cool completely.
6. Buttercream Icing: Sift the powdered sugar into a bowl on speed 4 using the scale and sifter attachment. Set aside.
7. Place the softened butter in the bowl of a stand mixer fitted with the flat beater. Beat the butter on speed 4.
8. Turn the speed control to speed 8 and gradually add the sifted powdered sugar, allowing the butter and powdered sugar to blend before adding more. Add the whole milk and mix until incorporated.
9. Divide the buttercream icing into 3 equal portions. Leave one portion in the mixer bowl. Add the red food coloring and mix until evenly colored.
10. Take 3 piping bags and fill each with a portion of the buttercream icing. Set aside one piping bag with the white buttercream icing.
11. Cut off the tops of the piping bags and insert the two piping bags with the red and white colored icing into another empty piping bag. Cut off the tops.
12. Cut the cake into 3 equal layers. Pipe the two-tone buttercream frosting onto the cake, starting from the center (you can use a turntable to make this easier).
13. Place a second cake layer on top of the buttercream frosting.
14. Repeat and place the last cake layer on top (making sure it's upside down).
15. Using the remaining white buttercream frosting, frost the top and sides of the cake.
16. Decorate the top with crushed candy canes. Insert two candy canes into the top cake layer.
