200 g granulated sugar
55 g unsalted butter, softened
2 eggs, room temperature
75 g full-fat sour cream
240 g all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract
100 ml coffee
20 g unsalted butter, softened (for the streusel)
100 g granulated sugar (for the streusel)
1 teaspoon all-purpose flour (for the streusel)
1 teaspoon ground cinnamon (for the streusel)
1. First, prepare the coffee using the KitchenAid coffee maker. Once ready, set aside 100 ml.
2. Attach the scale and sifter attachment to the stand mixer. Sift the flour, baking powder, and salt on speed 4. Set aside.
3. Combine the butter and sugar in the bowl of a stand mixer fitted with the flat beater and mix on speed 4 for 1 minute.
4. Add the eggs, sour cream, coffee, and vanilla extract. Mix for 30 seconds on speed 4.
5. Combine the wet ingredients with the dry ingredients and mix on speed 2 until combined.
6. Pour the mixture into a baking pan lined with parchment paper.
7. Streusel topping: Place the all-purpose flour, sugar, cinnamon, and butter in the bowl of a stand mixer fitted with the flat beater. Mix until crumbly.
8. Spread the streusel over the cake batter.
9. Bake in a preheated oven at 170°C (340°F) for 1 hour. After 1 hour, insert a toothpick into the center of the cake; if it comes out clean, the cake is ready. Let the cake cool for 20 minutes before cutting.
