360 ml warm water
7 g instant baking powder
1 teaspoon salt
1 tablespoon brown sugar
1 tablespoon unsalted butter
500 g all-purpose flour
A pinch of coarse sea salt
120 g baking soda
2 l water
1. Place the water, yeast, salt, brown sugar, and melted butter in the bowl of a stand mixer.
2. Attach the dough hook to the mixer and add 1/3 of the flour. Mix on speed 2.
3. Gradually add the remaining flour.
4. The dough is ready when the indentation slowly springs back when you press it with your finger.
5. Turn the dough out onto a floured surface, knead by hand for 3 minutes, and shape it into a ball.
6. Cover with a cloth and let rest for 10 minutes.
7. Meanwhile, preheat the oven to 200°C (400°F) and bring the water to a boil.
8. Cut the dough into 50g pieces. Roll the dough into a rope. Take the ends and pull them together so that the dough forms a circle. Twist the ends, then bring them toward you and press them down into a pretzel shape.
9. Add the baking soda to the water. Dip the pretzel in the water for about 20 seconds, remove it with a slotted spoon, and place it on a lined baking sheet.
10. Sprinkle the pretzels with coarse sea salt and bake for 12-15 minutes until golden brown.
