450 g Type 00 flour
4.5 eggs

60 g fresh spinach
1. Pour a tablespoon of water into a skillet and add the spinach. Cook for about 2 minutes, until the spinach is tender.
2. Transfer the eggs and spinach to a blender. Blend for 45 seconds on speed 4.
3. Attach the dough hook to the stand mixer. Add the flour and salt to the bowl. Turn the speed control knob to 4 and slowly add the egg mixture until the dough forms a ball. Knead the dough for 4 minutes.
4. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour.
5. Attach the pasta sheeter to the stand mixer. Set the thickness to 1. Turn the speed control lever to 2 and make the dough easier to roll out by rolling it up several times and folding it over on itself before rolling it up again. Adjust the knob to set the thickness to 2. Pass the dough through the rollers to flatten it further. Set the thickness to 3 and roll out the dough again. Always flour the dough before passing it through the rollers.
6. Attach the fettuccine die to the food processor. Turn the speed control lever to 2 and begin feeding the dough through the die. As the fettuccine comes out, wrap it around your hand to form small nests if the pasta will be eaten immediately; otherwise, transfer the fettuccine to a drying rack.
