100 g softened butter
70 g powdered sugar
2 teaspoons salt
3+35 g eggs
175+5 g all-purpose flour
10 g almond flour
70 g cooled melted butter
100 g dark brown sugar
80 ml maple syrup
2 teaspoons vanilla extract
250 g pecans
1. Place the softened butter in the bowl of a stand mixer fitted with the flex-edge whisk attachment and mix on speed 4 for 3 minutes.
2. Add the powdered sugar and 1 teaspoon of salt and mix on speed 4 for 2 minutes. With the mixer still running, add 35g of one egg. Turn the speed control lever to 2 and add the all-purpose flour and almond flour.
3. Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for 1 hour.
4. Roll out the dough on a floured surface and place it on a greased cake pan. Blind bake the dough for 20 minutes in a preheated oven at 180°C.
5. Place the melted butter, brown sugar, and 1 tablespoon of flour in the bowl of a stand mixer fitted with the wire whisk attachment. Mix the ingredients on speed 4 for 1 minute. Add the maple syrup, vanilla extract, salt, and eggs. Mix on speed 4 for 30 seconds.
6. Evenly distribute the pecans inside the pastry. Pour in the filling and bake for 30 minutes in a preheated oven at 180°C (350°F).
7. Sprinkle a little salt on the cake before serving.
